Other requirements, from allergies to religious observance, are set out in the brief and passed to every kitchen on the route. Alcohol is served in licensed hotels, restaurants and on board, but not everywhere.
During Ramadan, daytime eating in public is quieter, and the evenings, with the fast broken at sunset, are among the liveliest times to eat in Egypt. A culinary thread also suits lifestyle journeys and honeymoons.
